The well known Swedish chef and writer gave LA SIDRA an interview during his visit to Asturies.
THE CIDER.- On August’s issue of LA SIDRA magazine there is a very interesting interviet to Jonas Borssen -carried out by Estíbaliz Urquiola- in which he declares himself in love with cider and states that he would like to spread its culture.
This renowned man with international prestige, awarded by the Swedish Gastronomy Academy fir his innovative culinary contributiones and also for his literary works is nowadays president and editor of The Swedish Chile Pepper Association and also recognized by the Confrérie du Piment d’Espelette in France for his work regarind peppers. During the last five years has been working on a wider project of gastronomic festivals including cider and Nava’s Cider Festival.
In the interview he explains his vision about cider in general and Asturian one in particular, ending with a phrase as a claim against the isolation situation we suffer in Asturies “there should be an air route between Stockholm and Asturies”.
For now he has announced the chance to participate in the next International Hall of Gala Ciders (SISGA) to be held in Xixón from 39th of September ti 2nd of October.
